Celebrating with Cocktails
With the weekend fast approaching, we wanted to share some of our favourite cocktail recipes to have you celebrating Canada Day (or the fourth of July for our US friends) in style. Whether you add alcohol or not these drinks are sure to be a hit. Happy long weekend!
(recipe via Baking Beauty)
1 Cup Fresh Blueberries, (Set aside a few for garnish if desired)
4 oz Rum
10 Fresh Mint Leaves
2 Teaspoons White Sugar
Juice of 2 Limes
6 oz Club Soda
Blend or muddle blueberries until smooth. Set aside.
Use a muddler or wooden spoon to blend in mint leaves and sugar.
Stir in rum, lime juice, and blueberry mixture.
Pour over club soda & ice. Gently stir. Garnish with extra blueberries, lime and mint.
RIESLING STRAWBERRY SLUSHIE
(recipe via Style and Grace)
2 1/2 cups hulled strawberries
1 bottle [750ml] dry Riesling
1 tablespoon fresh lime juice
2 1/2 tablespoons sugar
Put aside 1 cup of the Riesling covered in the fridge.In a food processor add strawberries with the remaining wine, lime juice and sugar.
Pour the mixture into ice cube trays and freeze until solid.
When you’re ready to serve puree the ice cubes with the remaining wine in your blender.
WATERMELON CUCUMBER COCKTAIL

It doesn't get much more refreshing than this!
5 cups cubed seedless watermelon (about 1 1/2 pounds)
1 large English cucumber, peeled and cut into chunks
1/4 cup fresh lime juice
2 tablespoons honey
2/3 cup vodka
Cucumber slices, for garnish
Set a large fine-mesh sieve over a large bowl or pitcher.
In a blender, puree watermelon.
Pour watermelon puree through sieve, pressing on solids with a rubber spatula (you should have about 2 cups juice).
Puree English cucumber and pour through sieve into watermelon juice.
Stir together lime juice and honey in a bowl. Add to watermelon and cucumber juices, along with vodka.
Serve with ice and garnish with cucumber slices.
GREEN TEA AND GIN COCKTAIL
(recipe via Refinery29)
If you are looking for a low-cal option, this ones for you.
2 oz iced green tea
1.5 oz Hendricks gin
Splash of diet ginger ale
1 lime wedge
5 mint leaves
5 cucumber slices
Muddle the lime wedge, cucumber slices, and mint leaves in a mixing glass.
Add gin and green tea. Cover and shake.
Fill glass with ice and transfer ingredients.
Top glass with a splash of diet ginger ale or regular ginger ale and soda water.
Garnish with lime wedge.
Of course, it’s not officially July 1st without a caesar.
4 oz. Clamato juice to taste
1-2 oz. Vodka (any kind will do)
1 dash of olive juice for an extra kick
3 shakes of Worcestershire sauce
2 shakes of hot sauce
1 tsp of lemon juice
Salt and pepper to taste
And this is where you get creative. Try any combinations of the items below,
Shrimp (peeled or whole and head-on)
Pickled beans or asparagus
Pepperoni or other sausage
Pour one to two tablespoons of celery salt onto a side plate. Rim your glass with a lime wedge and dip your glass into the celery salt. Turn until the entire rim is covered. Lift and tap off the excess.
Fill your rimmed glass with ice. Add all ingredients, stir well, and finish with your garnish of choice.
